Salmon on spinach and enoki mushrooms

Ingredients

  • 600 g Salmon fillet
  • 800 g leaf spinach
  • 1 Onion
  • 1-2 Garlic cloves
  • 1-2 TABLESPOONS Oil
  • 10-12 TABLESPOONS Soy sauce
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Sesame
  • 1 TABLESPOON Butter
  • 1 package (100 g) Enoki mushrooms

Directions

    Wash the salmon, dab dry and cut into 8 pieces. Clean, wash and drain the spinach. Peel and dice onion and garlic

    Heat the oil in a large pot. Sauté the onion and garlic in it. Add the spinach and cover and let it collapse. Steam covered with 6-7 tbsp soy sauce and 5 tbsp water for approx. 5 minutes. Season with pepper

    Roast sesame seeds without fat, remove. Fry the salmon in hot butter for about 3 minutes on each side. Season with 4-5 tablespoons soy sauce and pepper

    Cut off the root piece from the enokis. Fold the mushrooms with half of the sesame seeds under the spinach. Season to taste. Serve with salmon and sprinkle with the rest of the sesame seeds. Served with: rice

    Enokis are suitable raw for salads and go well with Asian cuisine, e.g. in soups or wok dishes. Important: add them just before serving - they quickly become too soft!
