Separate eggs. Chop chocolate. Cream egg yolks, sugar and vanilla sugar. Add salt, hazelnuts, cream, chopped chocolate and breadcrumbs and mix everything together. Beat the egg whites until stiff and fold into the mixture. Grease a pudding mould with lid (approx. 900 ml capacity) and sprinkle with breadcrumbs.
Pour in the pudding mixture and close the mould. Cook in a slightly boiling water bath for about 1 hour. Then remove from the mould while still warm. Makes about 12 pieces. Dust with icing sugar and serve decorated with fruit and mint. Vanilla sauce tastes good with it
