Chocolate dumplings with steamed apples

Ingredients

  • 225 g Dark chocolate coating
  • 3/8 l Milk
  • 3 Egg yolk (size M)
  • 250 g Butter brioche
  • 7-10 Tbsp (Hefezopf)
  • 7-10 Tbsp Peel and juice of 1 untreated lemon
  • 2 medium-sized red apples
  • 4 TABLESPOONS Calvados or sherry
  • 2 TABLESPOONS Sugar
  • 1 package Vanilla flavoured dessert sauce (without cooking)
  • 4 TABLESPOONS Quince or apple jelly
  • 1 Egg
  • 100 g Breadcrumbs
  • 1 kg Frying fat

Directions

    Melt 200 grams of chocolate in 1/8 litre warm milk. Stir in egg yolk. Dice yeast plait. Pour chocolate milk over it and knead everything well. Wash apples, cut out cores.

    Cut apples into thin slices. Bring the calvados, lemon juice, sugar and four to five tablespoons of water to the boil. Steam apples for four minutes, drain. Mix the sauce powder and the remaining milk for one minute.

    Cut off some of the dough with a tablespoon. Press a depression into it, fill with jelly and form into dumplings. Whisk the egg. Turn the dumplings first in the egg, then in the breadcrumbs. Bake in hot frying fat for eight minutes.

    Melt the rest of the chocolate. Arrange gnocchi, apple rings and sauce. Sprinkle with chocolate.
