Chives-Rösti with quark dip

Ingredients

Servings: 4
  • 250 g Low-fat curd
  • 200 g Sour cream or crème fraîche
  • 2-3 TABLESPOONS Milk
  • 7-10 Tbsp salt, white pepper
  • 1 collar Spring onions
  • 1 collar Radishes
  • 1 small onion
  • 1/2 bunch Chives
  • 500 g Potatoes (mainly firm when cooked)
  • 1 egg, 1 tablespoon flour
  • 2-3 TABLESPOONS Oil
  • 75 g thin slices of raw ham

Directions

    Stir the curd, sour cream and milk until smooth. Season to taste with salt and pepper. Clean and wash spring onions and radishes. Peel the onion. Cut whole onions into fine rings and radishes into slices. Fold in the quark dip except for a little bit. Sprinkle with the rest of the radishes and onions

    Wash the chives and cut into small rolls. Peel, wash and roughly grate the potatoes. Mix both with egg and flour. Season with salt and pepper

    Heat the oil in portions in a large frying pan. Fry 8-10 Rösti from the potato mixture in it one after the other until golden brown, keep warm. Serve with quark dip and ham

    The lightning-fast alternative: mix the finished Rösti dough (refrigerator shelf) and chives
