Chive scrambled eggs

Ingredients

Servings: 7
  • 16 cherry tomatoes
  • 1 small onion
  • 1 collar Chives
  • 100 g Gouda cheese
  • 14 Eggs (size M)
  • 7-10 Tbsp Salt
  • 10 discs Bacon
  • 6 small fried sausages (approx. 50 g each)
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Butter or margarine
  • 200 g Smoked salmon
  • 7-10 Tbsp Dill

Directions

    Wash and clean the tomatoes. Peel and finely chop the onion. Wash the chives, dab dry and cut into fine rolls. Grate cheese coarsely. Beat the eggs, whisk and season with salt.

    Fry breakfast bacon in a pan until crispy brown, remove and keep warm. Fry the sausages in the bacon fat until golden brown, take them out. Fry the onion in the frying fat, add the tomatoes and fry briefly more.

    Season with salt and pepper. Heat the fat in another pan and add the whisked eggs. Briefly set the egg mixture aside and then scrape the mixture off the bottom of the pan again and again with a spatula to prevent it from sticking.

    The scrambled egg is ready when it is still a little moist. Arrange all ingredients in bowls and garnish with the chive rolls. Fill salmon in a bowl and garnish with dill. Keep scrambled eggs, sausages and bacon warm in a pan on a chef's plate.

    Fresh rolls and brown bread taste good with it.
