Chicken with pistachios in puff pastry

Ingredients

Servings: 4
  • 2 discs (à 112,5 g) deep-frozen puff pastry
  • 2 Chicken fillets (approx. 150 g each)
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 washer (25 g) White bread
  • 1/2 bunch Parsley
  • 35 g Pistachio kernels
  • 1 egg (size M)
  • 2 Oranges
  • 150 g Fresh cream
  • 4 TABLESPOONS Brandy
  • 7-10 Tbsp Basil
  • baking paper

Directions

    Place the puff pastry slices next to each other and defrost. Rinse fillets and pat dry. Heat 1 tablespoon of oil in a frying pan and fry the chicken fillets on both sides for about 2 minutes.

    Take out, season with salt and pepper, let cool down a little. Remove the crust from the bread and crumble it coarsely. Wash parsley, dab dry, put something aside for garnishing. Finely grind bread with 20 g pistachios, parsley and 1 tablespoon of oil in a universal chopper.

    Season to taste with salt. Roll out puff pastry slices to a 20 x 20 cm sheet. Spread pistachio crumbs on the slices, leaving a rim of about 5 cm. Place chicken fillets on top. Whisk the egg and brush the edges with it.

    Wrap the fillets in the dough. Place the packet on a baking tray lined with baking paper with the seam facing downwards. Brush with egg. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 25 minutes.

    Squeeze 1 orange. Heat the frying fat in the pan again. Add crème fraîche, brandy and orange juice (approx. 60 ml) and bring to the boil. Season to taste with salt and pepper. Peel 1 orange so that the white skin is completely removed.

    Cut orange into slices. Chop 15 g pistachios. Cut chicken into slices, arrange with sauce and orange slices. Sprinkle with pistachios and garnish with parsley and basil.
