Wash herbs, shake dry. Pluck leaves or needles from the stems or twigs of half of the herbs and chop them. Cut tomatoes into cubes, olives into slices. Peel 1 garlic clove and press it through a garlic press.
Wash chickens thoroughly on the outside and inside and dab dry. Knead minced meat, egg, breadcrumbs, olives, tomatoes and garlic. Season with salt and pepper. Fill chicken with minced meat and season with salt and pepper.
Place on the fat pan of the oven. Cook in the preheated oven (electric cooker: 175 °C/ circulating air: 150 °C/ gas: level 2) for approx. 1 1/2 hours. Flatten the remaining garlic. Peel and slice the onion.
Wash the lemon, grate dry and cut into corners. Spread the garlic, onion, lemon and other herbs on the baking tray 45 minutes before the end of the cooking time. Remove the chicken and cut it into pieces.
Remove the filling and cut into slices.
