Water the skewers for about 10 minutes. Peel ginger, grate finely and mix with the orange juice. Wash the fillet, dab dry and dice. Place them close together on the skewers, leaving the ends free. Sprinkle with the marinade.
Cover and chill for about 30 minutes.
Dab skewers dry and fry them in hot oil all around for about 5 minutes. Season with salt and pepper.
