Pour the pineapple into a sieve and collect the juice. Cut the pineapple slices in half. Quarter peppers, clean, wash and cut into strips. Peel onions and cut into slices. Wash and clean the mangetouts.
Wash the meat, dab dry and cut into strips. Prepare rice in boiling salted water according to package instructions. Heat oil in a wok or frying pan. Fry meat vigorously for about 10 minutes while turning.
After 4 minutes add the paprika and onions. Add pineapple 2 minutes before end of cooking time. Pour on the juice and season with salt and chilli sauce. Arrange on plates and garnish with chives. Add rice and sprinkle with chopped chives.
