Wash the meat and dab dry. If necessary, halve the fillets. Heat the oil in a large pan, fry the meat well all around, season with salt and pepper. In the meantime peel and chop the onions. Peel and finely chop the garlic. Wash, clean and roughly dice the tomatoes. Remove the meat. Put onions and garlic into the pan, fry while turning, sprinkle with sugar. Add tomato paste and sauté briefly. Add tomatoes, deglaze with vinegar, bring to the boil. Season to taste with salt, pepper and paprika. Simmer at low heat for 15 to 20 minutes. Grate the parmesan finely. Put the meat into an ovenproof dish and spread the tomatoes over it. Sprinkle with 50 grams of parmesan and peanuts and bake in a preheated oven (electric range: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 35 minutes. Remove from the oven, garnish with basil and sprinkle with 25 grams of parmesan cheese. Flatbread tastes good with it
