Cheese and sesame dices on savoy cabbage

  • 300 g medieval Gouda cheese
  • 250 g Shallots
  • 750 g Savoy cabbage
  • 1 Egg yolk (size M)
  • 1 TABLESPOON Whipped cream
  • 2 TABLESPOONS Oil
  • 50 g unpeeled sesame
  • 1 jar(s) (425 ml; separation weight: 250 g) Apricots
  • 3 TABLESPOONS Soy sauce
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Noble sweet paprika and coriander green

Directions

    Cut the cheese into cubes. Peel the shallots. Clean, wash and quarter the savoy cabbage and cut out the stalk. Cut the savoy cabbage into strips. Whisk egg yolk and cream. Heat oil in a frying pan, turn cheese cubes in whisked egg yolk first, then in sesame.

    Pour into the hot oil and fry for 1-2 minutes while turning. Remove cheese cubes from the pan. Add shallots to the pan and fry for approx. 4 minutes while turning, add savoy cabbage and fry for another 4 minutes while turning. Deglaze vegetables with apricots and soy sauce, season with salt and pepper and braise for another 4 minutes. Place cheese cubes on the vegetables, dust with paprika and garnish with coriander green
