Chanterelles in spiced vinegar

Ingredients

  • 500 g Chanterelles
  • 4 Garlic cloves
  • 2 small onions
  • 1 Branch rosemary
  • 1/2 l White wine vinegar
  • 1 heaped teaspoonful of salt
  • 2 TEASPOONS Sugar
  • 2 TEASPOONS Mustard seeds
  • 1 TEASPOON Peppercorns
  • 3 Bay leaves
  • 10 Juniper berries

Directions

    Clean, wash and drain the mushrooms. Possibly halve them. Peel and dice garlic and onions. Wash the rosemary. Fill mushrooms into prepared twist-off jars

    Bring 1 l water, vinegar, rosemary, onions, garlic and spice ingredients to the boil

    Pour boiling hot stock over the mushrooms, close the lid (keep the rest of the stock). On the 2nd day pour off the stock, bring to the boil again and pour over the mushrooms. Repeat on the 3rd day. If necessary, always add the rest of the stock so that the mushrooms are covered. Leave to stand for approx. 1 week
