Ingredients

  • 200 g cherry tomatoes
  • 250 g Chanterelles
  • 350 g French beans
  • 7-10 Tbsp Salt
  • 100 g streaky smoked bacon
  • 1 Onion
  • 4 TABLESPOONS White wine vinegar
  • 100 ml Vegetable broth (instant)
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 1 collar Thyme

Directions

    Clean, wash and dry the tomatoes. Clean and wash chanterelles. Clean, wash and cut the beans into bite-sized pieces. Cook the beans in boiling salted water for about 15 minutes.

    In the meantime, finely dice the bacon and leave it crisp in a pan. Peel and finely dice the onion. Add to bacon and fry until translucent. Take out and chanterelles in the frying fat for 5 minutes all around strong b

    Add the tomatoes and melt. Remove. Add vinegar and vegetable broth to the roast and bring to the boil once. Fold in the oil. Season with salt and pepper. Drain beans and rinse with cold water.

    Mix beans, chanterelles, tomatoes and vinaigrette. Wash the thyme, dab dry and add the leaves, except some for garnishing, from the stems and fold into the salad. Grey bread tastes good with it.
