Clean and wash the celery. Cut into 8 pieces of about 6 cm long. Cut 4 celery leaves into strips, put the remaining leaves aside for garnishing. Peel and halve the papaya and remove the seeds with a teaspoon.
Cut the fruit flesh into small cubes. Puree half of it and mix it with the cream cheese until smooth. Season to taste with salt. Spread the cream on the celery pieces. Add the remaining papaya cubes and the nuts to the cream.
Serve garnished with chopped celery leaves and coloured pepper. Fresh baguette tastes good with it.
