Wash the meat. Cook in 1 litre of boiling salted water for about 1 1/2 hours. In the meantime, clean, wash, peel and chop the soup greens. Clean and wash the cauliflower and cut it into small florets.
Add prepared vegetables to the meat during the last 20 minutes and cook along with it. Season with pepper and horseradish. Remove the meat, dice it and put it back into the pot. Season stew again.
Wash parsley, dab dry, chop and sprinkle over it.
