Cauliflower chopped salad with sambal dressing

A salad is not something to eat? Far from it, as the spicy cauliflower salad with an extra portion of mince proves. Tastes just as good lukewarm as cold, by the way!

Ingredients

Servings: 4
  • 1 Cauliflower (about 800 g)
  • 7-10 Tbsp salt, pepper
  • 7-10 Tbsp Sugar
  • 2 (approx. 250 g) Courgette
  • 2 yellow peppers
  • 250 g cherry tomatoes
  • 2 small red onions
  • 1 TABLESPOON Oil
  • 400 g Beefsteak mince (Tatar)
  • 150 g ripened cream
  • 2-3 TEASPOONS Sambal Oelek
  • 4-5 Tbsp light balsamic vinegar
  • 4 Stem(s) flat leaf parsley

Directions

    Clean the cauliflower, cut into florets and wash. Cook in boiling salted water for 8-10 minutes. Drain well.

    Clean, wash, halve and slice the zucchini. Clean, wash and chop the peppers. Wash and halve the tomatoes. Peel onions and cut into thin rings.

    Heat the oil in a pan. Fry the minced meat for 5-6 minutes until crumbly. Season to taste with salt and pepper and remove. Steam zucchini, paprika and onions in hot frying fat for about 4 minutes. Stir in tomatoes.

    Season vegetables with salt and pepper.

    For the dressing, mix sour cream, Sambal Oelek and vinegar. Season to taste with salt, pepper and sugar. Wash parsley, shake dry, pluck off leaves and chop coarsely. Mix cauliflower, minced meat, vegetables and dressing.

    Arrange salad and sprinkle with parsley. Tastes lukewarm or cold.
