Ingredients

  • 150 g Cashew nuts
  • 250 g Flour
  • 50 g finely chopped candied lemon peel
  • 150 g Sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 pinch Salt
  • 200 g Butter or margarine
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Flour
  • baking paper
  • 1 Egg Yolk
  • 1 TABLESPOON Milk
  • 100 g halved cashews
  • 2 TABLESPOONS Sugar crystals
  • 50 g roughly chopped candied lemon peel

Directions

    Grind cashew nuts in the universal grinder. Mix with flour, candied lemon peel, sugar, lemon peel, salt and cool fat in flakes to a smooth short pastry. Wrap in cling film and refrigerate for approx. 1 hour.

    Roll out to a thickness of approx. 3 mm on a floured work surface. Cut out stars (approx. 5 cm Ø). Place on 2 baking trays lined with baking paper. Whisk egg yolk and milk and brush the stars with it.

    Spread the cashew nuts, decorating sugar and candied lemon peel on top, press lightly. Bake the trays one after the other in a preheated oven (electric: 200 °C/ gas: level 3) for 12-15 minutes. Results in about 50 pieces.
