Caramelized walnut and apple slices

Ingredients

Servings: 20
  • 500 g Flour
  • 150 g + 1 tablespoon of sugar
  • 7-10 Tbsp Salt
  • 1 cube (42 g) Yeast
  • 250 g Applesauce
  • 1 egg (size M)
  • 100 g soft half-fat butter
  • 1.2 kg Apples
  • 50 g Walnut kernels
  • 7-10 Tbsp juice of 1/2 lemon
  • 1 glass (225 g) Apricot Jam
  • 7-10 Tbsp low-fat butter

Directions

    Put flour, 75 g sugar and 1 pinch of salt in a bowl. Stir yeast and 1 tablespoon sugar until liquid. Add applesauce, egg, butter and yeast to the flour and knead all ingredients to a smooth dough. Cover and leave to rise in a warm place for about 45 minutes

    Knead the yeast dough again and roll out on a greased fat pan of the oven (32 x 39 cm). Cover again and let it rise for about 30 minutes

    Peel the apples, remove the cores with the help of an apple corer. Halve the apples and cut them into thin slices. Chop walnuts. Caramelise 75 g sugar in a pan. Add apples and walnuts and deglaze with lemon juice. Leave to cool

    Place apple slices on the cake and sprinkle with the walnuts. Bake in the preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) on the middle shelf for about 25 minutes. Remove, cover the edge with aluminium foil and bake again at the same temperature on the 2nd rack from above for approx. 10 minutes.

    Take out the cake and let it cool down. Boil up the jam with 1 tablespoon of water and brush the cake with it
