Wash the plums, dab dry, cut in half and remove the stones. Cut the plums into slices. Caramelise the sugar in a pan until golden. Add butter, plum slices and lemon juice and simmer for about 5 minutes while stirring (caramel must be completely dissolved and boiled down syrupy with the juice). Remove caramelized plums from the heat and let them cool down.
Wash lemon balm, shake dry and cut into fine strips, except for something for decoration. Sprinkle strips of lemon balm over the lukewarm plums and arrange on plates. Arrange one ball of walnut ice cream on each plate and decorate with balm. Dust with icing sugar
