Melt the fat. Mix the eggs in a mixing bowl until creamy. Add melted fat and buttermilk and mix. Mix flour, baking powder, sugar and salt and stir into the egg-buttermilk mixture.
Heat clarified butter in a coated pan and add two scoops of clarified butter with a ladle. Bake pancakes on each side until golden brown. Sprinkle pancakes with brown sugar. Serve with small balls of butter as desired.
Maple syrup tastes good with it. Makes about 12 pieces.
