Brussels sprouts stew with pork belly and apples

Ingredients

Servings: 4
  • 500 g Pork Belly
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 l clear broth (instant)
  • 500 g Potatoes
  • 500 g Brussels sprouts
  • 2 sour apples
  • 1-2 TABLESPOONS Soy sauce
  • 1 collar Parsley

Directions

    Wash pork belly and pat dry. Remove the rind with a sharp knife, cut the meat into bite-sized cubes. Heat the oil in a pot and fry the meat cubes.

    Season with salt and pepper. Pour in broth, cover and cook for about 1 hour. In the meantime peel, wash and chop the potatoes. Clean and wash the Brussels sprouts. After 45 minutes cooking time add potatoes and Brussels sprouts to the meat.

    Wash, quarter and core the apples. Cut the fruit flesh into pieces. Cook the apple pieces for the last 5 minutes. Season to taste with salt, pepper and soy sauce. Wash and finely chop the parsley.

    Sprinkle over the stew before serving.
