Broccoli noodles with nut sauce

Ingredients

  • 7-10 Tbsp - 2 slices of white bread
  • 7-10 Tbsp - 150 ml milk
  • 7-10 Tbsp - 50 g walnut kernels
  • 7-10 Tbsp - 500 g broccoli
  • 7-10 Tbsp - 400 g ribbon noodles (e.g. linguine)
  • 7-10 Tbsp - Salt
  • 7-10 Tbsp - 50 g Parmesan cheese (piece)
  • 7-10 Tbsp - 2 cloves of garlic
  • 7-10 Tbsp - 1⁄2 Pot of oregano or parsley
  • 7-10 Tbsp - 4-5 tablespoons olive oil
  • 7-10 Tbsp - Pepper
  • 7-10 Tbsp - 1-2 tsp lemon juice

Directions

    Finely dice white bread. Pour milk over it and soak for about 10 minutes. Coarsely chop nuts and roast them in a pan without fat. Take out.

    Clean and wash the broccoli and cut it into small florets. Pasta in plenty of boiling salted water.

    Cook for 6-8 minutes. Add broccoli after about 3 minutes and cook along.

    Grate parmesan. Peel and coarsely chop the garlic. Wash oregano, shake dry and pluck off the leaves. Put something aside for garnishing. Blend the rest with parmesan, soaked white bread, garlic, nuts and oil in a blender.

    Season nut sauce with salt, pepper and lemon juice. Drain the pasta and broccoli, drain and put back into the pot. Add nut sauce and mix everything carefully. Serve immediately and garnish with oregano leaves.
