Ingredients

  • 250 g French beans
  • 7-10 Tbsp Salt
  • 1 Tomato
  • 1 blanched veal sausage
  • 1 Egg Yolk
  • 2 TABLESPOONS Flour
  • 7-10 Tbsp Sweet peppers
  • 1-2 TABLESPOONS Oil
  • 1-2 TABLESPOONS Butter or margarine
  • 7-10 Tbsp fresh herbs

Directions

    Clean and wash the beans, cut them into bite-sized pieces. Cook in boiling salted water for about 15 minutes and drain. In the meantime, wash, clean, quarter, seed and cut the tomato into small cubes.

    Cook the sausage in lightly boiling water for about 10 minutes. Cut lengthwise in half and remove the skin as desired. Turn first in egg yolk, then in flour and paprika. Fry in hot oil for about 2 minutes on each side.

    Melt the fat. Swivel the tomato and beans in it. Arrange with the sausage and garnish with herbs. Serve with mashed potatoes and rosemary.
