Ingredients

  • 500 g Honey
  • 500 g Sugar
  • 1 Vanilla pod
  • 2 untreated limes
  • 2 kg Quinces
  • 125 ml Brandy

Directions

    For the sugar solution put honey, sugar and 700 ml water in a pot. Cut open the vanilla pod and scrape out the pulp. Halve 1 lime and squeeze the juice. Add the lime juice, vanilla pod and pulp to the sugar and bring to the boil.

    Wash the remaining lime and cut into slices. Peel, quarter, core and slice the quince. Add the quinces and lime slices to the boiling stock, bring to the boil again and cook over a low heat for 20-30 minutes.

    In the meantime wash glasses thoroughly. Remove quinces and lime slices from the stock with a skimmer and fill into the glasses. Boil down the brew like a syrup and let it cool down. Mix with brandy and pour over the quinces.

    Close glasses; store in a cool and dark place.
