Braised prime rib with bean salad

Ingredients

  • 2.5 kg prime rib of beef
  • 7 medium-sized onions
  • 8–10 Garlic cloves
  • 125 g Barbecue sauce
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 4 Carrots
  • 4 Tomatoes
  • 2-3 TEASPOONS + 1 Msp. vegetable broth
  • 1 kg green beans
  • 100 g Bacon in strips
  • 8 TABLESPOONS white balsamic vinegar
  • 5 TABLESPOONS Olive oil
  • 4 Stem(s) Parsley and basil
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the meat, dab dry. Peel 2 onions and 2 garlic cloves, dice coarsely. Mix with sauce and 1-2 tsp. pepper. Spread the meat with the sauce, cover and chill for about 12 hours.

    Peel, wash and slice the carrots. Peel 6-8 garlic cloves. Peel 3 onions, cut into slices. Wash and quarter the tomatoes.

    Remove the marinade from the meat and store. Place meat and vegetables on the fat pan. Bake in the preheated oven (electric cooker: 225 °C/circulating air: 200 °C/gas: level 4) for approx. 30 minutes. Dissolve 2-3 teaspoons of broth in approx. 3⁄4 l hot water, pour on little by little.

    Turn down the oven (electric cooker: 175 °C/circulating air: 150 °C/gas: level 2), roast everything else for 2-2 1⁄2 hours. Cover meat with aluminium foil in between.

    Clean, wash and break the beans into pieces. Cook in boiling salted water for about 15 minutes.

    Peel 2 onions, dice finely. Fry the bacon in a pan without fat until crispy. Fry the onions briefly. Deglaze with approx. 100 ml water and vinegar, stir in 1 pint of stock. Season with salt, pepper and sugar.

    Add oil. Pour hot marinade over the beans and leave to stand for approx. 1 hour.

    Coat the meat with the marinade approx. 15 minutes before the end of the cooking time and finish frying. Wash the herbs and, except for some parsley for garnishing, cut finely. Stir into the salad. Arrange everything and garnish with parsley.

    Mashed potatoes. Drink: cold beer.
