Braised meat ribs with onion-pepper-cucumbers

Ingredients

Servings: 4
  • 1 kg Meat ribs (let the butcher cut them into approx. 7 cm pieces)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Oil
  • 250 g small onions
  • 2 large red peppers
  • 1 glass (330 ml) Gherkins
  • 200 g Pasta (e.g. gnocchi)
  • 1 TABLESPOON Flour
  • 7-10 Tbsp Parsley

Directions

    Wash the ribs, dab dry and rub with salt and pepper. Heat the oil in a frying pan. Sauté the ribs well in it. Deglaze with 3/4 litre water and bring to the boil. Peel onions, clean, wash and cut the peppers into pieces.

    Add vegetables to the meat. Place roasts in a preheated oven (electric: 200 °C/ gas: level 3) and braise for 50 to 60 minutes. In the meantime, cut the cucumbers into slices. Cook pasta in plenty of boiling salted water for 10 to 12 minutes.

    Take ribs out of the roaster. Stir flour and some water until smooth and thicken the sauce with it, bring to the boil again. Season to taste with salt, pepper and cucumber water. Add ribs and cucumber slices to the sauce and heat up again briefly.

    Drain the pasta and let it drain. Garnish ribs on a plate with parsley. Serve the noodles and ribs together.
