Wash the chicken, dab dry and divide into 8 parts. Rub chicken parts with salt, place on a fat pan and roast in the preheated oven (electric cooker: 200 °C / gas: level 3) for approx. 40 minutes. In the meantime peel the shallots. Drain the apricots and collect the juice. Peel garlic and cut into slices. Clean and wash spring onions and cut into pieces.
Mix honey, oil, ketchup and Tabasco. Spread the chicken parts after about 20 minutes of frying time. Add apricots, garlic, shallots and spring onions to the fat pan. Deglaze with apricot juice and wine and cook to the end. Serve chicken pieces and apricot vegetables garnished with chilli rings, lemon slices and mint to taste
