Bouillon with Egg Sting Stars

Ingredients

Servings: 6
  • 600 g Cooking beef
  • 1 collar Soup Greens
  • 7-10 Tbsp some peppercorns
  • 1-2 cloves, 1 bay leaf
  • 3 eggs , 1/8 milk (size M)
  • 7-10 Tbsp salt, nutmeg, pepper, fat
  • 1/2 bunch parsley, aluminium foil

Directions

    Wash the meat. Clean or peel, wash and chop the soup vegetables. Boil up everything with spices and 1 1/2 l water. Then simmer for about 1 1/2 hours. Skim in between

    Whisk eggs and milk. Season with salt and nutmeg. Grease two moulds or cups. Pour in egg milk, close with aluminium foil. Cover and leave to stand in a hot water bath for 25-30 minutes

    Sieve the bouillon. Season to taste. Turn over the egg, cut out stars or dice. Wash and chop parsley. Serve the bouillon with egg and parsley
