Ingredients

  • 2 Bread rolls from the previous day
  • 200 g Flour
  • 200 g Durum wheat semolina
  • 7-10 Tbsp Salt
  • 1 pinch Sugar
  • 200 ml Milk
  • 1 cube (42 g) Yeast
  • 2 Eggs (size M)
  • 7-10 Tbsp Flour

Directions

    Cut the rolls into small cubes. Mix flour, semolina, 1 level teaspoon salt and sugar in a bowl. Warm the milk lukewarm, dissolve the yeast darin while stirring. Add to the flour mixture with eggs. Knead everything briefly with the dough hooks of the hand mixer. Knead in the bread cubes. Continue kneading the dough on a lightly floured work surface for approx. 5 minutes with your hands until the dough is smooth and supple. Cover and leave to rise in a warm place for approx. 1 hour

    Briefly knead the dough on a floured work surface and form into an elongated dumpling (approx. 22 cm long). Let it rise again in a warm place for about 15 minutes. Carefully put the dumplings into boiling salt water and let them simmer for about 40 minutes. Take out dumplings and cut them into slices
