Blackberry cream with sesame brittle

Ingredients

  • 100 g Sugar
  • 20 g Sesame
  • 250 g Low-fat curd
  • 300 g Whole milk yoghurt
  • 1 package Vanillin sugar
  • 7-10 Tbsp juice of 1/2 lemon
  • 250 g Blackberries
  • 7-10 Tbsp Icing sugar and mint
  • 7-10 Tbsp Oil

Directions

    Put 50 g sugar in a large pot and mix with 4-5 tablespoons of water. Let it caramelize at high heat. As soon as the sugar at the edge turns brown and becomes liquid, stir the rest of the mixture gradually into the brown liquid sugar using a wooden spoon handle. When all the sugar has caramelised, remove the pan from the heat and stir in sesame seeds. Spread on an oiled plate or platter and let it cool down.

    In the meantime, mix quark, yoghurt, vanillin sugar, 50 g sugar and lemon juice. Sort the blackberries, clean them and, except for a few for decoration, carefully fold them in. Break the caramel into 8 pieces and arrange with the blackberry cream. Decorate with the remaining blackberries and mint. Dust with icing sugar
