Wash the potatoes and boil in water for about 20 minutes. Meanwhile peel the turnips and kohlrabi and cut into slices. Clean and wash the mangetouts. Clean, wash and chop the wild garlic very finely.
For the gnocchi, drain and peel the potatoes. Press hot potatoes through a potato ricer. Season with salt, pepper and nutmeg. Stir in semolina immediately with a wooden spoon. Let the mixture cool down a bit. First stir in starch and egg yolk, then wild garlic. Let it cool down.
For the pepper crust, wash the thyme and chop finely. Coarsely crush the green pepper. Heat 1 tablespoon butter in a frying pan. Roast breadcrumbs in it. Roast lemon zest, 3⁄4 green pepper and thyme briefly with it. Remove.
Pat the steaks dry and wrap 1 slice of bacon around each, pin the bacon with a wooden skewer.
For the gnocchi, form potato dough on a little flour into 2-4 rolls (each approx. 2 cm Ø). Cut into about 40 pieces and form into oval dumplings. Press one side slightly with a fork.
For the steaks, heat oil in a pan. Fry the steaks for about 2 minutes on each side. Season with salt and pepper and place on a baking tray. Spread the breadcrumb mixture over the steaks (see tip below). Fry in a hot oven (electric: 150 °C/circulating air: 125 °C/gas: see manufacturer) for approx. 15 minutes. Deglaze the roasting set with crème fraîche and cream, bring to the boil. Stir in the remaining green pepper. Season sauce with salt. Keep warm.
Cook gnocchi in 2 portions in plenty of boiling salted water for about 7 minutes. Lift out and keep warm.
For the vegetables, first cook kohlrabi in boiling salted water for about 5 minutes. Add the turnips and cook for about 5 minutes. Add sugar snap peas and continue cooking for about 2 minutes. Heat 2 tablespoons of butter in a pan, deglaze with lemon juice, heat and season to taste with 1 pinch of sugar. Drain the vegetables and toss in the hot lemon butter. All
Do not let the steaks cool down for a long time, but spread the breadcrumb mixture on top of them quickly. Then cook them in the oven to the point.
