Bean salad with bacon vinaigrette

Ingredients

  • 400 g green beans (e.g. French beans)
  • 400 g Wax beans
  • 7-10 Tbsp salt, white pepper
  • 100 g streaky smoked bacon
  • 1 medium onion
  • some stem(s) fresh or approx. 1/2 tsp dried marjoram
  • 2 TABLESPOONS Oil
  • 3-4 Tbsp Herb Vinegar
  • 1 TABLESPOON grainy mustard
  • 1 pinch Sugar
  • 7-10 Tbsp some salad leaves
  • 7-10 Tbsp Tomato

Directions

    Clean and wash the beans and break or cut them into pieces and cook them in boiling salted water for about 15 minutes

    Finely dice the bacon. Peel and finely chop the onion. Wash the fresh marjoram and chop finely, except for a little bit for garnishing

    Heat the oil in a pan. Fry the bacon until crispy. Add the onion and marjoram and sauté. Deglaze with 3 tablespoons of water and vinegar. Stir in mustard. With pepper,

    1 pinch of sugar and possibly salt to taste. Drain the beans and mix with the marinade. Let the salad stand for about 30 minutes. Mix from time to time

    Wash and drain the lettuce leaves. Arrange on plates and arrange the bean salad on top. Garnish with tomatoes and remaining marjoram. Roast bread tastes good with it
