Ingredients

Servings: 4
  • 375 g green beans
  • 250 g Cutting beans
  • 7-10 Tbsp Salt
  • 2 Onions
  • 75 g streaky smoked bacon
  • 1 collar Parsley
  • 4 TABLESPOONS Oil
  • 4-5 Tbsp White wine vinegar
  • 7-10 Tbsp Pepper
  • 125 g red and yellow cherry tomatoes

Directions

    Clean, wash and drain the green beans and string beans. Cut the cutting beans diagonally into pieces. Cook the beans in boiling salted water for 10-15 minutes. Meanwhile peel onions and cut into cubes. Dice the bacon finely as well. Wash parsley, dab dry and chop, except for a little bit for garnishing. Drain the beans.

    Heat the oil in a pan and leave the bacon in it until crispy. Steam onions briefly and deglaze with vinegar and 2-3 tablespoons of water. Add the beans and parsley, season with salt and pepper and leave to stand for about 30 minutes. Wash the tomatoes, dab dry, cut in half and fold into the salad. Season again with salt, pepper and possibly vinegar. Arrange in a bowl and serve garnished with remaining parsley
