Bean and bacon salad in tomato ring

Ingredients

Servings: 4
  • 2 can(s) (à 425 ml) large white beans (e.g. Italian)
  • 1 collar Spring onions
  • 75-100 g Smoked bacon
  • 2-3 TABLESPOONS Olive oil
  • 5 TABLESPOONS White wine vinegar
  • 7-10 Tbsp salt, pepper, 1 pinch of sugar
  • 2 discs (50 g each) White bread
  • 2 TABLESPOONS Butter
  • 4 medium-sized tomatoes
  • 1 collar Chives

Directions

    Rinse and drain the beans. Clean, wash and cut spring onions into rings

    Cut the bacon into strips and leave them crispy. Deglaze with oil, vinegar and 5 tablespoons of water. Season bacon marinade with salt, pepper and sugar. Mix with beans and spring onions. Leave everything to stand for about 15 minutes

    Dice the bread and roast it in hot butter while turning. Take out. Clean, wash and slice the tomatoes. Put them on a plate like a ring and season. Wash and finely chop the chives. Arrange bean-bacon salad on top. Sprinkle with chives and croutons
