Ingredients

  • 1 Lime
  • 2 Garlic cloves
  • 1 TABLESPOON Worcestershire sauce
  • 100 g Ketchup
  • 50 ml Maple syrup
  • 5 TABLESPOONS Soy sauce
  • 2 TABLESPOONS demerara sugar
  • 1-2 TEASPOONS Mustard
  • 2 pinch(es) Allspice powder
  • 2-3 TABLESPOONS Oil
  • 1.2 kg short spare ribs
  • 600 g deep-frozen fries
  • 1 l oil for frying
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

    Halve the lime, squeeze the juice. Peel garlic and chop finely. In a pot, mix Worcestershire sauce, ketchup, maple syrup, soy sauce, brown sugar, chopped garlic, mustard, allspice, lime juice and oil and bring to the boil. Let the sauce simmer for about 5 minutes, stirring occasionally

    Place the ribs on a baking tray and spread with half of the marinade. Roast the meat in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 60-70 minutes. After about half of the cooking time, coat with the remaining marinade

    Bake French fries in hot fat according to package instructions. Remove and season with salt and a little pepper. Arrange ribs and French fries on plates and serve immediately
