Caramelise the sugar in a small pot. Stir in butter and 1 pinch of salt and deglaze with cream
Peel curls from the chocolate with a peeler. Peel bananas, mash 50 g banana with a fork, cut the remaining bananas into slices and sprinkle with juice from 1/2 lemon. Mix quark with icing sugar, remaining lemon juice and crushed banana and fold in approx. 50 g of chocolate curls
Coarsely chop the rusk, divide into 4 glasses and sprinkle each with 1 tbsp. orange juice. Spread banana slices, except for 4 slices for garnishing, on top. Spread the quark cream on the banana slices, pour caramel sauce on top, put 1 banana slice in each and decorate with chocolate curls
