Cut the orange in half and squeeze. Mix mascarpone, sugar and orange juice. Stir in the quark. Wash the strawberries, take 2 pieces aside and cut in half. Clean the rest of the strawberries. Puree half of the strawberries and pass through a sieve.
Quarter the other half. Shortly before serving, layer the mascarpone cream, strawberries, fruit puree and balsamic cream in glasses and decorate with 1/2 strawberry each.
