Onions peel and quarter. Wash the oregano and, except for something to garnish, pluck the leaves from the stems. Cut the leaves into fine strips. Heat oil in a pot. Steam onions and half of the oregano for 1-2 minutes.
Add vinegar, red wine and honey. Bring everything to the boil and simmer covered for 10 minutes. Put onions in a bowl and marinate covered for at least 8 hours. Serve onions garnished with oregano
