Mix egg, juice, 2 tablespoons of sugar and salt. Add flour little by little while stirring. Let the dough swell for about 20 minutes. Wash and clean the strawberries, halve depending on size. Cut melon into quarters, scrape out seeds.
Cut the melon flesh from the skin. Cut the melon into pieces. Bring 75 ml water and 3 tablespoons of sugar to the boil, simmer until syrupy. Add orange peel and let cool down. Heat the oil in a large pot to approx. 180 °C.
Dip the fruits in portions into the batter, let them drip off a little and put them into the hot oil. Fry until golden yellow and drain on kitchen paper. Sprinkle the baked fruits with the orange syrup and arrange on plates with 1 scoop of ice cream each.
Decorate with balm and dust with icing sugar.
