Ingredients

  • 4 sheets Gelatine
  • 1 Vanilla pod
  • 500 ml Milk
  • 1 pinch Salt
  • 5 Egg yolk (size M)
  • 100 g Sugar
  • 250 g Whipped cream
  • 75 g green and blue seedless grapes
  • 2-3 TEASPOONS Honey
  • 5 Stem(s) Mint

Directions

    Soak gelatine in cold water. Carve the vanilla pod lengthwise, scrape out the pulp. Put milk, salt, vanilla pulp and vanilla pod in a pot. Bring the milk to the boil, remove from the heat and remove the vanilla pod. Let milk cool down for about 10 minutes. Mix egg yolks and sugar with the whisk of the hand mixer until creamy.

    Stir in the milk bit by bit. Pour egg milk back into the pot. Heat up with a wooden spoon while stirring until the cream thickens (do not let it boil!). The cream has the right consistency when it remains on the spoon and no longer runs down thinly. If you blow lightly on the spoon, bulges will form that remotely resemble a rose. Pour the cream into a bowl and let it cool down a little. Squeeze the gelatine and dissolve in the hot cream. Chill the cream, stirring occasionally. Whip the cream until stiff. When the cream begins to gel, carefully fold in the cream. Pour the cream into 4 glasses (each containing approx. 300 ml), chill for at least 2 hours. Wash the grapes, dab dry, cut in half and mix with honey.

    Squeeze the gelatine and dissolve in the hot cream. Chill the cream, stirring occasionally. Whip the cream until stiff. When the cream begins to gel, carefully fold in the cream. Pour the cream into 4 glasses (each containing approx. 300 ml), chill for at least 2 hours. Wash the grapes, dab dry, cut in half and mix with honey. Wash mint, shake dry, pluck leaves, except for something to garnish, from the stems, cut finely and stir into the grapes. Arrange the grapes on the cream, decorate with mint
