Jalapeno tarte flambée with BBQ mince

Ingredients

  • 7-10 Tbsp Salt
  • 300 g Flour (Type 550)
  • 10 g Yeast
  • 1 TEASPOON Sugar
  • 3 TABLESPOONS Oil
  • 250 g mixed minced meat
  • 7-10 Tbsp Pepper
  • 150 g Barbecue Sauce
  • 100 g Jalapeños
  • 50 g Cheddar cheese
  • 250 g Schmand
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Put 1 large pinch of salt and flour in a bowl. Stir yeast with sugar until liquid, add to flour. Add approx. 175 ml lukewarm water and 2 tbsp. oil and knead to a smooth dough with the dough hooks of the hand mixer. Form a ball and let it rise covered in a warm place for about 1 hour.

    Heat 1 tablespoon of oil in a frying pan. Fry the minced meat in it until crumbly, season with salt and pepper. Add barbecue sauce and mix well. Remove from heat and let cool. Clean the jalapeños, cut into fine rings, wash and drain. Grate cheddar roughly. Mix sour cream with cheddar.

    Cut the dough in half. Roll out one half on a floured work surface until very thin and round. Place on a baking tray lined with baking paper. Spread half of it with sour cream and cover with half of jalapeños and minced meat. Bake in a preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for 12-15 minutes. Remove the tarte flambée from the oven and bake the second tarte flambée in the same way.
