Apricot-raspberry groats with curd

Ingredients

  • 5-6 Apricots
  • 150 g Raspberries
  • 3/8 Passion fruit juice
  • 3 TSP Sugar
  • 1-2 TABLESPOONS Lemon juice
  • 1 go. Tsp cornstarch
  • 200 g Edible quark (20 %)
  • 5 TABLESPOONS Milk
  • 1 TEASPOON Cocoa
  • 1 Bar of milk or dark chocolate

Directions

    Carve the apricots, blanch them with boiling water, let them stand for a short time and then quench them. Peel skin. Core the apricots and cut into slices. Select the raspberries and wash them carefully if necessary.

    Season passion fruit juice with approx. 1 teaspoon sugar and lemon juice. Add the apricots, bring to the boil. Stir starch and some water until smooth. Stir into the juice and bring to the boil again. Carefully fold in the raspberries. Let the groats cool down

    Stir the quark, milk and cocoa until smooth. Season to taste with approx. 2 teaspoons of sugar. Serve the groats and quark. Slice off the chocolate for sprinkling with a peeler and sprinkle on top

    If you like, you can give the groats a particularly refined note with 2 tablespoons of apricot liqueur or raspberry brandy

    It is even more convenient if you use ready-made grater instead of chocolate
