Baked marzipan loaves

Ingredients

  • 1/2 Vanilla pod
  • 1 egg (size M)
  • 250 g Marzipan raw mass
  • 85 g Icing sugar
  • 30 g Flour
  • 1 TEASPOON Whipped cream
  • 1 TEASPOON Lemon juice
  • baking paper
  • 1 small freezer bag

    Cut the vanilla pod open lengthwise and scrape out the pulp (keep the pod sprinkled with a little sugar in a small glass, use it for other purposes, e.g. when preparing a flummery). Separate the egg. Mix the egg white, raw marzipan, 60 g icing sugar, flour and vanilla pulp to a smooth mixture. With moistened hands, form small loaves of bread about 4 cm long. Spread on a baking tray lined with baking paper. Mix egg yolk and cream and spread on the breads.

    Bake in a preheated oven (electric: 175°C/ gas: level 2) for approx. 25 minutes. Let cool down on a cake rack. In the meantime, stir the remaining icing sugar and lemon juice until smooth. Put into a freezer bag, cut off a small corner and decorate the bread with sugar loops. Leave to dry. Results in about 14 pieces
