Baked baguette with chicken and spinach

Ingredients

  • 400 g Chicken filet
  • 1-2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 (approx. 45 cm long) Baguette bread
  • 1-2 TABLESPOONS soft butter
  • 1 small red pepper
  • 300 g cherry tomatoes
  • 75 g young leaf spinach
  • 4 TABLESPOONS Basil Pesto
  • 100 g Parmesan cheese

Directions

    Wash the chicken, dab dry and cut into cubes. Heat oil in a pan. Fry the meat in it at medium heat for 3-4 minutes, but do not let it get too dark. Season with salt and pepper, remove

    Cut the baguette in half horizontally and brush the cut surfaces very thinly with butter. Heat up the grill pan. Cut each baguette half into 4 equally sized pieces and place them in portions with the cut surface in the pan and roast them for 3-4 minutes until you can see the grill stripes

    In the meantime, halve the peppers, clean, wash and cut into strips. Wash and halve the tomatoes. Wash spinach and shake dry

    Remove the baguettes and spread with pesto. Spread half of the spinach leaves on the baguettes, then cover with diced chicken, pepper strips and tomato halves. Grate the parmesan and sprinkle over it. Bake the baguettes on a baking tray in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for 8-10 minutes. Remove baguettes from the oven, garnish with the remaining spinach leaves and serve immediately
