Baked apples with semolina foam

Ingredients

  • 5 small sour apples (about 750 g)
  • 150 ml apple juice
  • 4-5 coated tablespoons of sugar
  • 7-10 Tbsp Juice of 1 lemon
  • 1/2 l milk, salt
  • 50 g Spelt Semolina
  • 2 Eggs
  • 2 TABLESPOONS flaked almonds

Directions

    Peel and halve the apples and remove the core. Place in an ovenproof dish. Boil up apple juice, 1-2 tablespoons sugar and lemon juice, pour over

    Cover the apple halves and bake in the preheated oven (electric oven: 200 °C/circulating air: 175 °C/gas: level 3) for approx. 20 minutes

    Bring milk and 1 pinch of salt to the boil. Stir in semolina and 2 tablespoons of sugar, bring to the boil. Remove from the heat and let it swell for about 5 minutes. Separate the eggs. Stir in the egg yolks one by one. Beat egg whites until stiff and fold in portions

    Spread semolina foam on the apples. Sprinkle with almonds and 1 tbsp. sugar. Bake at the same temperature for 10-15 minutes
