Apple cold dish with snow dumplings

Ingredients

Servings: 4
  • 4 Apples (about 200 g each)
  • 2 TABLESPOONS + 1 tsp lemon juice
  • 8 TABLESPOONS Sugar
  • 750 ml apple juice
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 3 Stem(s) Thyme
  • 1 stick of cinnamon
  • 15 g Cornstarch
  • 2 Protein (size M)
  • 8 TSP Cranberries in their own juice
  • 7-10 Tbsp Cinnamon

Directions

    Wash apples, dab dry, quarter, core and cut into slices. Drizzle apples with lemon juice. Mix 6 tablespoons of sugar with approx. 2 tablespoons of water in a pot and let it caramelize golden brown. Deglaze with apple juice, add thyme and cinnamon and simmer until the sugar is dissolved. Add apple slices, bring to the boil and simmer for about 3 minutes.

    In the meantime stir starch with a little water until smooth. Boiling soup with it, thicken slightly creamy, bring to the boil again. Pour soup into a large bowl and let it cool down for about 30 minutes. Afterwards put it in a cool place for at least 30 minutes. When the soup is cold, beat the egg whites until stiff. Add 2 tablespoons of sugar and fold in 1 teaspoon of lemon juice. Bring a large pot of water to the boil, turn off the stove. Cut off 2 tablespoons of egg whites, add to the water and cook for 4-5 minutes in a closed pot in the after-heat. Remove the dumplings with a skimmer, drain and allow to cool.

    Add 2 tablespoons of sugar and fold in 1 teaspoon of lemon juice. Bring a large pot of water to the boil, turn off the stove. Cut off 2 tablespoons of egg whites, add to the water and cook for 4-5 minutes in a closed pot in the after-heat. Remove the dumplings with a skimmer, drain and allow to cool. Arrange soup and snow dumplings in cooled bowls, sprinkle dumplings with cinnamon. Drizzle cranberries over the cold bowl
