Ingredients

  • 4 sour apples (600 g; e.g. Elstar)
  • 150 ml cloudy apple juice
  • 75 g + 1 tablespoon of sugar
  • 7-10 Tbsp Juice of 1 lemon
  • 500 ml Milk
  • 1 pinch Salt
  • 50 g Durum wheat semolina
  • 2 Eggs (size M)
  • 2 TABLESPOONS flaked almonds

Directions

    Peel and halve apples, remove core. Put into an ovenproof dish. Boil up apple juice, 25 g sugar and lemon juice, pour over the apples. Cover and bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 20 minutes.

    For the semolina foam, bring milk, 50 g sugar and salt to the boil. Add semolina while stirring, bring to the boil, remove from the heat and allow to swell for approx. 5 minutes. Separate the eggs. Stir in egg yolks one after the other.

    Beat egg whites until stiff, fold in carefully. Put semolina foam on the apples, sprinkle with almonds and 1 tablespoon of sugar. Bake in the oven at the same temperature for 10-12 minutes.
