Bring milk, sugar and 1 pinch of salt to the boil. Stir in the rice pudding and simmer over a low to medium heat for about 25 minutes, stirring occasionally.
Turn off the cooker and let the rice pudding swell on the cooker for about 10 minutes. Wash the orange hot, rub dry and grate the peel (use the pulp for other purposes). Serve rice pudding sprinkled with brown sugar, ½ tsp. cinnamon, orange peel and coconut chips.
