Prepare the basic dough (see recipe "One dough for all") and chill for about 1 hour.
Mix sultanas and apple juice and let it steep for about 30 minutes. Mix sugar and cinnamon. Wash the apple and cut out the core. Cut the apple straight at the top and bottom, cut crosswise into 8 approx. 4 mm thin slices and add lemon juice.
Line baking tray with baking paper. Drain the sultanas and chop roughly. Preheat the oven (electric oven: 200 °C/circulating air: 175 °C/gas: see manufacturer) Roll out the dough on a floured work surface until it is about 3 mm thin.
Cut out approx. 16 circles (each approx. 2 cm larger than the apple slices), kneading and rolling out the remaining dough again and again.
Place apple slices on 8 dough circles. Distribute the sultanas in the middle of each apple. Sprinkle slices with half of the cinnamon sugar. Cut or cut out small motifs from the remaining dough circles. Place the dough circles on the apple slices.
Press the edges of the dough all around with a fork. Place the cut out mini elements on the dough lids. Whisk egg yolk and cream. Spread the dough with it. Sprinkle with the rest of the cinnamon sugar. Place on the baking tray.
Bake in a hot oven for 15-20 minutes until golden brown. Remove from the oven and allow to cool.
