Baked apple with cranberry cheesecake filling

Ingredients

  • 200 g Low-fat curd
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 3 TABLESPOONS Honey
  • 2 Yolks (size M)
  • 2 TABLESPOONS Pudding powder "Vanilla Flavor"
  • 75 g dried cranberries
  • 4 Pommes (environ 175 g chacune ; p. ex. Boskop)
  • 7-10 Tbsp Icing sugar

Directions

    Mix the curd, lemon juice, lemon peel, honey, egg yolks and pudding powder until smooth with the whisk of the hand mixer. fold in 50 g cranberries

    Wash apples and grate them dry. Cut a lid off the apples. Hollow out apples with a ball cutter so that only a narrow edge remains. Pour curd cream into the apples. Sprinkle remaining cranberries on top

    Place apples in an ovenproof dish and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-35 minutes. Put the apple lids into the pan halfway through the cooking time. Arrange baked apples on plates. Dust with icing sugar and serve warm
